Produced in young, sandy vineyards, Abios Verdejo is a delicate wine. Vintners harvest its grapes in the evenings to avoid the sudden changes in sugar composition that often impact daytime harvests. The grapes then undergo a cold press process before fermenting in stainless steel tanks at a maximum temperature of 14 °C.
Abios Verdejo pairs well with chicken, fish, and shellfish.
