Xenys Monastrell is elaborated with select Monastrell grapes harvested from old and low-yield vineyards. The vintners destem the grapes then carry out vinification in stainless steel tanks for 15 days at a maximum temperature of 26 °C. The wine then passes to American and French oak casks and ages in dark, quiet maturing rooms for 12 months.
